I know I have been all about convenience foods lately. Today was the primary election here, and since I work in elections, I've been more than a little bit busy. Still, there's something to be said for knowing how to feed yourself when you have almost no time to prep and assemble a healthy meal.
I've been continuing with the frozen meal plus veggies strategy and I'm still loving it. One of the best so far was the beefy macaroni with peas. Serious comfort food.
Today I got off work at about 8 PM and found myself not at all hungry. I tend to shove any stress into my gastrointestinal tract, so this is hardly surprising. Jay and I went to a couple of restaurants to try and get my body to wake up and be interested in food, but it just wasn't happening.
He grabbed a frozen pizza at the store and we came home. I started poking around in the kitchen. I'd only had 600 or so calories so far and I knew I'd need to eat, but literally nothing sounded good. Then I stumbled upon some frozen veggies and remembered this post from Hungry Girl. Scroll down until the soup. Yeah. I happened to have that exact immunity veggies blend, and a box of organic butternut squash soup. With the help of the microwave, I had a huge helping of savory sweet Thanksgiving-in-a-bowl in very little time. The flavor balance was awesome, and soup is easy to eat even when you're not especially hungry. Plus, four cups of food for 320 calories is really nice.

As I was eating, I started thinking about other possible soup and veggie combinations. Corn lemongrass with shrimp and stir fry vegetables. Mushroom soup with chicken and stew vegetables. Broccoli soup with ... broccoli. And maybe some cheddar. Yum.

The soup sounds divine. And you've got me considering making a variation on mac and cheese with some rotini pasta, cheese of some kind, a can of peas in the pantry, and some fake beef. As it is, I might bring some frozen veggies to throw into the soup I made and put in cold storage a few weeks ago. Ran out of room in the freezer on Saturday thanks to food for a party we threw, so my soup is now in the fridge waiting for me to bring it out of retirement or throw them out.
I made mac and cheese recently with whole wheat fusili, peas, amy's spicy chili, and some laughing cow cheese. Topped it with some low fat shredded cheddar. For some reason chili mac is my ultimate comfort.
